yes, i am so afraid that i may be late so i had baked this last week. Made half the recipe and reduced by further 20% of sugar but i think i shldnt have reduced cos the cake was not sweet. I did not hv wheat bran so i substituted with wheatgerm and that was a mistake ..cos it gave a bitter aftertaste! LOL! yeah..i think it was the wheatgerm that caused the bitterness..i nvr thought of that earlier..i'm not sure how bran taste like..anyway it wasnt too bad with the carrots and the berries..and extremely moist..it doesnt get hard even you fridge it.
and will be making the gruyere bread hopefully by this week ..
Hi Lena,I replaced the wheat bran with same amount of oats. Maybe the bitterness is from the dark molasses? And yes, I did not reduce the sugar, the sweetness is just right.
not sure. i used blackstrap molasses, taste like soy sauce :)
