Q&T : Dark Chocolate-Almond Cake

    I've made this cake, and it is good! I think that I have overbaked it a little as the centre is not gently soft when at room temperature. Mine is more like a cake texture but the flavour is awesome! I used rum, and it was perfect with the chocolate.
    It is so, so chocolaty, (I used bittersweet choc), the texture is moist, soft and very fragrant from the rum. I made only half a recipe, baked in a 7" round springform pan, baked for 30 minutes. If you are making half a recipe, try baking it for only 25 minutes (or adjust accordingly) for a softer centre.

  2. Hi Joyce, I served this during Christmas, and everyone said it was wonderful, even better with vanilla ice cream :) I used coffee (instead of alcohol) and it was indeed moist and chocolate-y. I left some of the almonds a little larger so there was some crunch too.

  3. Hi ladies,

    I reckon this cake is ok but only moist inside, not outside. My two fussy men can taste the difference from my other chocolate cakes and didn't like it as much as the cakes...

  4. Hi Home Bakers!

    I've just baked it! Currently nursing a slice of cake on my lap while typing this. Like Mich, I also used coffee instead of alcohol, and the coffee amplified the chocolate taste nicely. I've also used hazelnut instead of almond, and I find that the taste of hazelnut is more subtle than almond. Somehow, my dark chocolate is rather sweet. I've cut down 1/4 of sugar and still the cake is on the sweet side. I've skipped the powdered sugar top because that would be an overkill. Luckily I tasted the crumbs before sprinkling on the powdered sugar.

      Mine was not too sweet, it was just right, maybe because I use bittersweet choc. I really like this cake!

  5. I will be late for this bake as the taps are dry in the location I am at.... ;( and it seems till Tuesday next week!!!

    1. Dry taps! I hate it when that happens! Don't worry about the bake, you have a whole month to submit!
      Hope JBA will get their job done sooner than Tuesday! No water, very inconvenient!
